GARLIC CHIPS
About ½ cup

These crunchy chips are perfect for adding texture and garlic flavor to salads, cream soups, and braised meats or vegetables.

Very thinly slice crosswise:

  • Peeled cloves from 2 heads garlic

Add the garlic slices to a small saucepan along with:

  • 1 inch vegetable oil

Place the pan over medium heat and allow to heat until the garlic begins to bubble and sizzle. Continue to cook until the garlic slices are light golden brown, about 10 minutes. To test for doneness, remove a few slices from the oil and let cool for 30 seconds. They should be crisp and break cleanly in half.

Place a fine-mesh sieve over a metal bowl and pour the oil into the strainer. Transfer the garlic slices to a plate lined with paper towels to drain. When cooled, transfer to an airtight container and store at room temperature for up to 2 weeks. Use the garlic-infused oil for stir-fries or sautés. (Refrigerate in a covered container for up to 1 month.)
