Succotash takes its name from the Narragansett word msickquatash, meaning “boiled kernels of corn.” This is entirely acceptable made with canned or frozen vegetables.

Cook in a medium saucepan over medium heat, stirring occasionally, until heated through:

  • 1 cup fresh, frozen, or drained canned corn kernels
  • 1 cup cooked lima beans or finely chopped green beans
  • 2 tablespoons butter
  • ½ teaspoon salt
  • teaspoon sweet paprika
  • Chopped parsley or thyme to taste
