CREAMY MASHED CAULIFLOWER

This mashed potato alternative is much quicker and very tasty.

Cut into florets, cutting off the tough end of the stem of:

  • 1 large head cauliflower (about 2 pounds)

Place in a large saucepan and add:

  • 1 cup chicken or vegetable stock or broth or water
  • 2 garlic cloves, chopped
  • ½ teaspoon salt

Bring to a boil, cover, reduce the heat, and simmer until the cauliflower is tender, about 10 minutes. Mash or puree in the pan with an immersion blender or transfer to a food processor and puree, adding:

  • ½ cup heavy cream, sour cream, or plain yogurt
  • 1 tablespoon butter

Season with:

  • Black pepper to taste
  • (Minced chives)
  • (1 tablespoon chopped parsley or tarragon)
