GARLIC-BRAISED BROCCOLI RABE

Bring 4 quarts water to a rolling boil in a large pot and add:

  • 1½ tablespoons salt

Meanwhile, cut into 1-inch pieces:

  • 1 bunch broccoli rabe (about 1 pound), stems peeled, if desired

Add to the boiling water and boil for 2 minutes, then drain and cool slightly. Squeeze the moisture out of the leaves. Heat in a large skillet over medium heat:

  • 2 tablespoons olive oil

Add:

  • 1 garlic clove, thinly sliced
  • (1 small dried red chile pepper)

Add the broccoli rabe and cook, stirring occasionally, until tender, about 4 minutes. Remove and discard the chile. Season to taste with:

  • Salt and black pepper
