BRAISED LIMA BEANS

If desired, add a couple smashed garlic cloves, sprigs of thyme, and a few grated Roma tomatoes for more flavor.

Place in a large skillet and add water to barely cover:

  • 4 cups shelled fresh (about 4 pounds in the pod) or frozen lima beans
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt

Bring to a boil, then cover, reduce the heat, and simmer until tender, 25 to 35 minutes depending on the age of the beans. Check the beans periodically and add a little water if needed. Stir in:

  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley, chives, or dill
