STIR-FRIED ASPARAGUS
4 to 6 servings

Please read about Stir-Frying.

Trim, above, and cut into 2-inch pieces:

  • 2 pounds asparagus

Heat in a wok or skillet over high heat:

  • 2 tablespoons vegetable oil

Swirl the oil in the pan, then add the asparagus along with:

  • 1 tablespoon slivered peeled ginger

Stir-fry for 2 to 3 minutes, then add:

  • 2 garlic cloves, slivered
  • ¼ teaspoon salt

Stir-fry for 1 minute, then add:

  • ¼ cup chicken stock or broth

Cover, reduce the heat slightly, and cook until the asparagus is tender, 3 to 5 minutes. If desired, serve sprinkled with:

  • (1½ tablespoons toasted white or black sesame seeds)
  • (1 teaspoon toasted sesame oil)
