ROASTED ASPARAGUS
3 to 4 servings

Position a rack in the top third of the oven and preheat it to 500°F.

Trim, above:

  • 1 pound asparagus

Place the spears on a baking sheet and drizzle very lightly with:

  • Vegetable oil

Toss the spears to coat and arrange them in a single layer. Roast until just tender, 6 to 8 minutes. Serve with any of the accompaniments suggested for Steamed Asparagus, or simply sprinkle with:

  • (2 tablespoons minced parsley, tarragon, and/or chives)
  • (Grated Parmesan)
  • Salt and black pepper to taste

Serve hot or at room temperature, garnished with:

  • Lemon wedges
