Prepare a medium-hot grill fire or preheat a gas grill to medium-high. Peel as directed in About Pineapples and cut lengthwise into 12 wedges:

Bring to a boil and cook, stirring frequently, until the mixture has thickened and looks syrupy, about 5 minutes. If desired, stir in:
Lightly brush the pineapple wedges with this mixture and place on the grill over direct heat. Grill, turning the wedges frequently and basting with the brown sugar mixture after each turn, until the wedges have grill marks and the sugar caramelizes, about 5 minutes total. Transfer to a platter and brush with more brown sugar mixture. Serve with:
