BAKED FIGS WITH RICOTTA

Preheat the oven to 350°F. Combine in a small saucepan:

  • cup sugar
  • 3 tablespoons water
  • Scraped seeds and pod from ½ vanilla bean, split lengthwise

Bring to a boil, stirring to dissolve the sugar. Remove the syrup from the heat and add:

  • ¼ cup sweet or dry Marsala

Remove the stems and halve from top to bottom:

  • 8 large fresh figs

Place cut side up in a shallow baking dish. Spoon the Marsala syrup over the figs and bake until the figs are tender, about 20 minutes. Meanwhile, stir together in a small bowl:

  • cup whole-milk ricotta
  • ¼ cup heavy cream
  • 1 teaspoon sugar

Place the figs in serving dishes, dab some of the cheese mixture into the center of each, and spoon the syrup around them. Serve warm or at room temperature. If desired, garnish with:

  • (Shaved or grated semisweet or bittersweet chocolate or chopped toasted almonds)
