Serve this salad with grilled fish or shrimp. Mango and papaya are great additions.
Combine in a large bowl:
- 2 cups grated fresh coconut meat
- 1 cup grated seeded cucumber
- ½ cup chopped cilantro
- Finely grated zest and juice of 1 lime
- 1 jalapeño pepper, seeded and minced
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
Let stand for 15 minutes before serving.
