MACERATED CHERRIES WITH HERBS

Serve as a side dish to grilled or roasted poultry or pork, or as a dessert with ice cream and pound cake.

Mix together in a medium bowl:

  • 1 pound sweet cherries, pitted and halved
  • ¼ cup sugar
  • 3 to 4 tablespoons lemon juice or balsamic vinegar, to taste
  • ¼ teaspoon black pepper

Let marinate for at least 15 minutes at room temperature, stirring once or twice, or up to 2 days in the refrigerator. Mix in just before serving:

  • 2 tablespoons chopped basil, mint, or tarragon

Serve at room temperature.
