CHERRIES JUBILEE
About 1 cup

Heat in a small saucepan over medium heat:

  • ½ pound Bing or other sweet cherries, pitted and halved
  • ¼ cup sugar

Cook, stirring, until the sugar is dissolved and the cherries exude enough juice to create a sauce. Add:

  • ¼ cup brandy, bourbon, or white rum

Heat until the liquor is warm, then carefully ignite it with a long wooden match or lighter. When the flames have died down, add:

  • 2 tablespoons kirsch

Serve hot on or with:

  • Sweet Crêpes, vanilla ice cream, or any cheesecake
