SOUR CHERRIES WITH RICOTTA, HONEY, AND ALMONDS

The quality of the ricotta is crucial to the success of this recipe. We recommend making some from scratch, but you may also find high-quality ricotta at specialty markets. Instead of the almonds, try crushing amaretti cookies and sprinkling them on top.

Combine in a small mixing bowl:

  • 1 cups whole-milk ricotta (12 ounces)
  • 3 tablespoons honey

Divide the ricotta among 4 bowls. Use a spoon to make a depression in the center of the ricotta and fill each with:

  • ¼ cup pitted sour cherries (1 cup total)

Pour over each:

  • 1 tablespoon kirsch or Maraschino liqueur (¼ cup total)

Sprinkle over each:

  • 2 tablespoons coarsely chopped Marcona almonds or toasted almonds (½ cup total)
