UNCOOKED CRANBERRY RELISH
About 2 ½ cups

Pick over:

  • One 12-ounce package cranberries (3 cups)

Cut into eighths, removing any seeds:

  • 1 unpeeled navel orange

Place half the cranberries and half the orange in a food processor and pulse until the mixture is finely chopped but not pureed. Transfer to a medium bowl. Repeat with the remaining cranberries and orange. Stir in:

  • 1 cup sugar, or to taste

Cover and refrigerate for at least 1 day, or up to 2 weeks.
