CAMPFIRE BANANAS
1 or 2 servings

These can be cooked in the embers of a hot grill fire, but they are best enjoyed at the end of a long day of hiking, cooked in a campfire.

Cut a slit lengthwise down:

  • 1 ripe banana, peel intact

Do not cut all the way through the bottom of the peel. Spread inside the peel on the banana:

  • 2 tablespoons peanut butter

Stuff into the cut part of the banana:

  • A few squares dark or bittersweet chocolate or 2 tablespoons chocolate chips
  • (2 tablespoons mini marshmallows)

Wrap the banana tightly in foil and place in hot coals. Allow to cook until the chocolate is melted and the banana is soft, 15 to 20 minutes. Eat with a spoon, scooping the soft banana from the peel.
