BAKED HONEYED APRICOTS

Serve these soft, buttery apricots with homemade ricotta, ice cream, Greek yogurt, or crème fraîche.

Preheat the oven to 375°F. Butter a 9-inch square or round baking dish or pie plate. Place cut side up in the dish:

  • 8 medium apricots (about 1 pound), halved and pitted

Drizzle the apricots with:

  • 3 tablespoons honey

Scatter over the fruit:

  • 2 tablespoons butter, cut into small pieces
  • Finely grated zest of 1 lemon
  • (2 teaspoons fresh thyme leaves)

Bake until the fruit is very soft and lightly caramelized, about 25 minutes. Sprinkle with:

  • ¼ cup finely chopped roasted pistachios
