SAUTÉED APPLE RINGS

Good as a topping for ice cream, on top of pancakes and waffles, or alongside roast pork.

Core and cut crosswise into ¼- to ½-inch slices:

  • 2 large all-purpose apples, such as Golden Delicious or Rome Beauty

Melt in a large skillet over medium heat:

  • 2 tablespoons butter or bacon fat, or more if necessary

Add a single layer of apple rings to the skillet. Cook until the bottoms are golden and beginning to caramelize, about 3 minutes. Turn and cook the apples until just tender when pierced with a fork. Set aside on a platter. Cook the remaining rings in batches, adding more butter or bacon fat to the skillet as needed. When all are done, sprinkle with:

  • 1 to 3 tablespoons brown sugar, to taste
  • (Calvados, apple brandy, or applejack)
  • Ground cinnamon
