FRUIT BRÛLÉ
4 to 6 servings

This is one of the stranger recipes in the book but also one of the most delicious. For brûléed citrus fruit, see Broiled Grapefruit.

Spread in a 9-inch round broilerproof baking dish or pie plate:

  • 3½ cups raspberries, blackberries, blueberries, small hulled strawberries, or pitted cherries

Mix together, then spread evenly over the fruit:

  • 1½ cups sour cream
  • 1 teaspoon vanilla

Cover and refrigerate until thoroughly chilled, or for up to 8 hours. Preheat the broiler. Dust the sour cream evenly with:

  • 1 cup packed brown sugar

so that none of the sour cream shows through. Place the dish about 6 inches from the heat and broil until the sugar caramelizes, 1 to 2 minutes. Watch closely so that the sugar does not scorch. Alternatively, use a propane torch or kitchen torch to brûlé the sugar. Serve at once.
