GRILLED OR BROILED FRUIT KEBABS WITH HONEY AND LIME
4 to 6 servings

Combine in a large bowl:

  • ½ cup grapefruit juice
  • Finely grated zest and juice of 1 lime
  • ¼ cup honey
  • 2 tablespoons orange liqueur or orange juice

Add, turning to coat, and marinate 30 minutes:

  • 2 medium-firm peaches, pitted and cut into 1-inch pieces
  • 1 cup peeled and cubed pineapple
  • 1 cup strawberries, hulled
  • 1 banana, cut into 1-inch pieces
  • 1 mango, peeled, pitted, and cut into chunks

Prepare a medium-hot grill fire, preheat a gas grill to medium-high, or preheat the broiler. If using wooden skewers, soak them in water for 30 minutes before using. Thread the fruit onto skewers. Grill or broil until lightly browned, about 5 minutes total, turning once and basting with the marinade. Serve sprinkled with:

  • Chopped mint
