GRILLED OR BROILED FRUIT
4 to 6 servings

I. GRILLED

Prepare a medium-hot grill fire or preheat a gas grill to medium-high. Lightly brush one of the following with vegetable oil:

  • 6 large apricots, halved and pitted
  • 4 large or 6 small bananas, peeled
  • 6 large figs, stemmed and halved lengthwise
  • 4 peaches or nectarines, halved and pitted
  • 6 large juicy plums, halved and pitted
  • 6 pineapple rings (about ½ inch thick)

Grill the fruits directly over the flames, arranging the halved fruits cut side down. Cook until lightly charred, 2 to 3 minutes. Turn and cook 2 to 3 minutes longer. Serve at once.

II. BROILED

Preheat the broiler. Prepare the fruit as directed in version I and place, hollow side up, in a shallow, broilerproof baking pan. Sprinkle lightly with:

  • Sugar
  • Salt

Broil 6 inches from the heat until lightly browned and juicy.
