DRIED FRUIT COMPOTE
3 cups; 8 servings

Eat this over oatmeal or yogurt at breakfast or serve as a dessert with cookies, cake, custard, or ice cream.

Combine in a medium heavy saucepan:

  • 1 pound dried fruit, one kind or mixed
  • 3 cups water
  • (Zest of 1 lemon or orange removed in strips with a vegetable peeler)
  • (1 cinnamon stick)

Bring to a gentle simmer, cover, and cook until the fruit is plumped, 25 to 35 minutes, adding more water if necessary to keep the fruit covered. Add:

  • ½ to 1 cup sugar, to taste

Simmer, uncovered, 5 minutes longer, stirring to dissolve the sugar. Serve warm or chilled.
