ASPARAGUS STRATA
6 to 8 servings

Heat in a large skillet over medium heat:

  • 2 tablespoons olive oil

Add:

  • 1 large onion, chopped

Cook, stirring frequently, until the onion is translucent, about 7 minutes. Stir in:

  • 1 pound asparagus, trimmed and cut into 2-inch pieces

Cook, stirring frequently, until the asparagus is fork-tender, about 5 minutes. Remove from the heat. Proceed as for:

Use the asparagus mixture for the filling and for the cheese, use:

  • 4 ounces crumbled fresh goat cheese
  • 4 ounces grated Gruyère or Swiss cheese

Add the goat cheese to the egg mixture and reserve the Gruyère or Swiss for sprinkling on top. Add to the egg mixture:

  • Up to cup chopped herbs such as basil and parsley

Proceed as directed.
