Quiche is perhaps the perfect excuse for cheese lovers to make a Cheddar Pie or Pastry Dough. As for the filling, prevent it from becoming watery by cooking and thoroughly draining vegetables, meat, and seafood before adding to the egg mixture. Use 1 ½ cups total:
- Sautéed, thinly sliced onions, shallots, or leeks
- Cooked broccoli or asparagus, chopped
- Sautéed Mushrooms, chopped
- Canned artichoke hearts, drained and roughly chopped
- Slow-Roasted Tomatoes
- Cubed Roasted Winter Squash
- Sautéed spinach, Swiss chard, or kale, chopped
- Ham, cooked bacon, prosciutto, or pancetta, chopped
- Cooked shrimp, peeled and deveined, picked lobster or crabmeat, or smoked salmon
- Chopped tarragon, chives, or basil
