BREAD CRUMB–FRIED EGGS

Another way to add flavor and texture to eggs while they fry. Prepare ½ recipe Browned or Buttered Bread Crumbs. Once lightly browned, season as desired and scoot the crumbs into mounds (one per egg you plan to cook). If the skillet looks dry, add more butter or oil. Prepare Fried Eggs, cracking one egg over each mound of bread crumbs. Cook to the desired degree of doneness as directed above.
