Melting and lightly frying a small mound of grated, aged cheese and then adding the eggs will produce a delectable, crispy crust. Do not use part-skim or reduced-fat cheeses. Prepare Fried Eggs using medium heat and only 1 tablespoon butter or fat. Before adding the eggs to the skillet, place 1 tablespoon grated hard cheese (such as sharp Cheddar, Parmesan, or Asiago) in a separate round for each egg in the pan. Allow the cheese to melt and sizzle, then crack an egg on top of each round of cheese. If the eggs stubbornly slip off their cheesy thrones, gently corral them back with a spatula. Cook to the desired degree of doneness as directed above.
