LOST EGGS

Inspired by a dish from the Portland restaurant Broder Café, these eggs are baked beneath a blanket of cheese and bread crumbs, perched atop ham slices and creamed spinach.

Preheat the oven to 425°F. Prepare in a large ovenproof skillet:

  • Creamed Spinach

Top the spinach with:

  • 4 ounces thinly sliced ham, torn into large pieces

Sprinkle over the ham:

  • ½ cup shredded mild cheese, such as Swiss, Gruyère, or Emmenthaler (2 ounces)

Make 4 divots in the cheese, ham, and spinach and crack into them:

  • 4 large eggs

Sprinkle with:

  • ½ cup shredded mild cheese, such as Swiss, Gruyère, or Emmenthaler (2 ounces)
  • ½ cup panko bread crumbs

Bake until the eggs are set, the cheese has melted, and the bread crumbs are browned, about 15 minutes. Serve with:

  • Toast
