ADDITIONS TO BAKED EGGS

I. Before baking, top the eggs with any of the following:

  • Sautéed Mushrooms or asparagus tips
  • Chopped tomatoes, or Slow-Roasted Tomatoes
  • Creamed Spinach or Braised Greens with Garlic
  • Finely chopped roasted vegetables
  • Crumbled cooked bacon, sausage, or diced ham
  • Flaked smoked salmon or picked crabmeat
  • Crumbled soft cheese, such as fresh goat cheese or feta, or grated hard cheese, such as Cheddar, Gruyère, or Parmesan
  • Chopped herbs or green onions

II. Place one of the following in the bottom of the baking dish or muffin tin before the egg:
