SAUSAGE AND PEPPER SUB
4 sandwiches

Cook slowly in a large skillet over medium heat until browned and cooked throughout:

  • 4 sweet or hot Italian sausages, pricked several times with a fork or paring knife

Transfer the sausages to a plate. Pour off all but 2 tablespoons of fat from the skillet. Add:

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 large bell peppers or 1 pound Italian frying peppers, seeded and cut into thin strips
  • (1 teaspoon dried oregano)
  • Salt and black pepper to taste

Cook over medium-low heat, stirring often, until the peppers are very soft, about 25 minutes. If desired, stir in:

  • (1 tablespoon balsamic vinegar)

Return the sausages to the skillet and heat through, about 3 minutes. Place one sausage on each of:

  • Four 6-inch hero rolls, split and warmed

Top with the onions and peppers. Gently press the sandwiches together and serve.
