CHINESE SMACKED CUCUMBER SALAD
4 to 6 servings

This recipe gives you permission to hit your vegetables, but know when to stop. The cucumbers should be cracked all over, not turned into mush.

Place on a cutting board:

  • 2 English cucumbers or 6 Persian cucumbers

Smack the cucumbers with a rolling pin or the flat side of a cleaver several times until the cucumber cracks in places. Coarsely chop the cucumbers and toss in a bowl with:

  • 1 tablespoon chili oil or Spicy Chinese Chile Crisp
  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese black vinegar or rice vinegar
  • 1 garlic clove, minced
  • 1 teaspoon sugar
  • (½ teaspoon ground Sichuan pepper)
  • ¼ teaspoon salt

Allow to marinate for at least 10 minutes and up to 30 minutes.
