DEE’S CORN AND TOMATO SALAD

Few things symbolize summer as well as corn and tomatoes. This salad is perfect for celebrating both when they are at peak ripeness.

Cut from the cob:

  • 3 cups corn kernels (about 6 ears)

Combine in a bowl with:

  • 1 large tomato, diced
  • ½ red onion, diced, or 4 green onions, thinly sliced
  • 2 tablespoons chopped basil

Barely moisten with:

Serve, chilled or at room temperature, within 2 to 3 hours, garnished with:

  • Basil leaves
