Combine in a medium bowl:
- 4 large carrots, coarsely grated (about 2 ½ cups)
- ½ cup raisins
- (½ cup coarsely chopped pecans or unsalted roasted peanuts)
- Finely grated zest of 1 lemon
- 1 tablespoon lemon juice
- ¾ teaspoon salt
- Black pepper to taste
Toss the salad with:
- ¼ cup sour cream or mayonnaise, or to taste
