CARROT AND RAISIN SALAD
6 to 8 servings

Combine in a medium bowl:

  • 4 large carrots, coarsely grated (about 2 ½ cups)
  • ½ cup raisins
  • (½ cup coarsely chopped pecans or unsalted roasted peanuts)
  • Finely grated zest of 1 lemon
  • 1 tablespoon lemon juice
  • ¾ teaspoon salt
  • Black pepper to taste

Toss the salad with:

  • ¼ cup sour cream or mayonnaise, or to taste
