CHILLED FRESH TOMATO CREAM SOUP
About 2 ½ cups; 2 servings

An excellent way to use surplus garden tomatoes.

Peel and coarsely chop:

  • 1 pound very ripe, flavorful tomatoes

Add to a blender or food processor, along with:

  • ½ cup heavy cream
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped basil

Blend or pulse so the soup is not exactly chunky but still has some texture. Season to taste with:

  • Salt and black pepper

Chill. Serve with:

  • Lemon wedges
