Prepare Lentil Soup, omitting the optional pancetta or bacon. After the lentils have cooked for 30 minutes, add 1 large gold potato, peeled and diced, and cook for 10 minutes. Add 4 ounces cured Spanish chorizo, diced, or 6 ounces kielbasa, sliced, and ½ cup water. Simmer until the potatoes are tender and the sausage is just heated through, about 5 minutes.
