GOUGÈRES (CHEESE PUFFS)
About 48 puffs

Pass these on a tray and serve with Champagne. Please read About Choux Paste.

Preheat the oven to 400°F. Prepare:

  • Choux Paste

stirring in:

  • 1 cup grated Gruyère (4 ounces)

Pipe the dough as for Stuffed Choux Puffs. Sprinkle with:

  • ½ cup grated Gruyère (2 ounces)

Bake for 15 minutes. Reduce the oven temperature to 350°F and bake until browned and firm, 10 to 15 minutes more. Fill as above, if desired, or serve as is.
