CHEESE PUFF CANAPÉS
12 to 16 pieces

Preheat the broiler. Beat in a medium bowl until very stiff:

  • 3 egg whites

Fold in:

  • 1 ½ cups shredded Gruyère or Swiss (6 ounces)
  • 1 ½ teaspoons Worcestershire sauce
  • 1 ½ teaspoons Dijon mustard
  • ¾ teaspoon sweet paprika

Toast, then arrange on a baking sheet:

  • Four 4-inch square slices white bread, crusts removed, quartered

Spread with the cheese mixture and place under the broiler until the cheese is puffed and brown.
