This treatment is also quite tasty with oysters or mussels.

Preheat the broiler. Combine in a bowl and mix well:

  • 4 tablespoons (½ stick) butter, softened
  • 1 green onion, finely chopped
  • 1 ½ tablespoons minced parsley
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt

Shuck, leaving on the half-shell:

  • 24 small hard-shell clams, such as cherrystone or littleneck

Place the clams on a rimmed baking sheet. Divide the butter mixture among the clams. Top them with:

  • 6 slices bacon, cooked until crisp and crumbled

Broil until the butter is bubbling, about 3 minutes.
