COCKTAIL MEATBALLS
About 70 meatballs

Preheat the oven to 350°F. Combine:

  • 2 pounds lean ground beef
  • 1 cup crushed cornflakes
  • ⅓ cup ketchup
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce
  • ¼ cup finely chopped parsley
  • 3 tablespoons minced onion or 2 tablespoons dried onion
  • 3 garlic cloves, minced
  • ¼ teaspoon black pepper

Form into meatballs 1 inch in diameter. Arrange in a 13 × 9 × 2-inch baking pan. Combine in a medium saucepan:

  • 16 ounces jellied cranberry sauce (1 ½ cups)
  • 1 tablespoon lemon juice
  • One 12-ounce bottle mild, tomato-based chili sauce

Stir over medium heat until the cranberry sauce melts. Pour over the meatballs in the pan. Bake, uncovered, until cooked through, about 30 minutes.
