Dredge the mozzarella sticks lightly in the flour, shaking off the excess. One by one, dip in the egg, coating completely, then roll in the bread crumbs to coat. Put the sticks on a plate and freeze for 15 minutes. Meanwhile, heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven:
