FRIED MOZZARELLA STICKS
About 25 pieces

Please read about Deep-Frying.

Cut into 3 ½ × ½ × ½-inch sticks:

  • 1-pound block mozzarella

Spread in a shallow dish:

  • ½ cup all-purpose flour

Beat in a shallow bowl:

  • 2 eggs

Spread on a plate:

  • ½ cup seasoned dry bread crumbs

Dredge the mozzarella sticks lightly in the flour, shaking off the excess. One by one, dip in the egg, coating completely, then roll in the bread crumbs to coat. Put the sticks on a plate and freeze for 15 minutes. Meanwhile, heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven:

  • 3 inches vegetable oil

Fry the mozzarella sticks in batches until golden brown, about 1 minute. Drain on paper towels. Serve hot with:
