QUESO FUNDIDO (HOT CHORIZO AND CHEESE DIP)
6 to 8 servings

We recommend using a combination of a stringy, melty type like Oaxaca cheese, and a sharp cheese like Cheddar.

Preheat the oven to 400°F. Cook in a medium skillet over medium heat until browned, 4 to 6 minutes:

  • 4 ounces fresh chorizo, crumbled

Transfer to a plate lined with paper towels to drain. Have ready:

  • 3 green onions, thinly sliced
  • 2 jalapeño peppers or ½ poblano, seeded and minced
  • 1 garlic clove, minced

Place in a 9-inch pie dish or shallow baking dish:

  • 3 cups grated Cheddar, Monterey Jack, Oaxaca, asadero, or Muenster cheese or a combination (12 ounces)

Top with the chorizo, green onions, jalapeños, and garlic and bake until bubbling and browned, about 10 minutes.

Serve warm with:

  • Tortilla chips or warmed small flour tortillas
  • Any salsa
