You’ll notice that this formula is similar to the Tom Collins, but with Champagne instead of club soda. Oh, what a difference those French bubbles make!

Fill a cocktail shaker with ice cubes. Add:

  • 1 ounce Cognac or gin
  • 2 teaspoons lemon juice
  • 1 teaspoon Simple Syrup

Shake until well chilled, about 12 seconds. Strain into a chilled Champagne flute and add:

  • 2 ½ to 3 ounces brut Champagne

Garnish with:

  • A lemon twist
