Canon Félix Kir was the mayor of the city of Dijon, in the Burgundy region of France, and a hero of the Resistance during World War II. His favorite drink was then called vin blanc cassis, based on Aligoté, the everyday white wine of the region, and another local product, black currant liqueur. Locals renamed the beverage in his honor. Today Kir is most often made with chardonnay. A Kir Royale replaces the white wine with Champagne.

Combine in a large wineglass and stir:

  • 6 ounces chilled chardonnay
  • Dash of crème de cassis
