Beat in a large bowl until stiff but not dry:

  • 3 egg whites

Set aside. Beat together in a medium bowl:

  • 3 egg yolks
  • 1 cup powdered sugar
  • 1 ½ teaspoons vanilla
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground allspice
  • Pinch of ground cloves

Fold the yolk mixture into the beaten whites. (The egg mixture will keep, refrigerated, for up to 2 days.) To serve, place 2 tablespoons of the egg mixture into each warmed 8-ounce mug and add to each:

  • 1 ounce dark rum
  • 1 ounce brandy or Cognac

Fill each mug with:

  • Very hot water, milk, or coffee

Stir vigorously until foamy. Dust the tops with:

  • Freshly grated nutmeg
