This cocktail is based on a mixture of water and rum rationed to British seamen to raise their spirits, make stagnant water more palatable, and prevent scurvy. Maple syrup, molasses, or honey may be substituted for the sugar.

Stir together in an 8-ounce mug:

  • 1 ½ ounces dark rum
  • ½ ounce lime juice
  • 1 to 2 teaspoons raw sugar, to taste

Fill the mug with:

  • Very hot tea or water

Garnish with:

  • A lemon or orange twist
  • A pinch of ground nutmeg or cinnamon
