Though ginger beer is really the thing to use here, when we can find it we love to substitute Blenheim’s Old #3 Hot-Red Cap.

Fill a chilled highball glass with ice cubes. Add:

  • 2 ounces dark rum, such as Goslings Black Seal
  • ½ ounce lime juice
  • About 4 ounces ginger beer, to fill the glass

Stir with a long spoon. Garnish with:

  • A lime wheel
