The classic Brazilian cocktail. Using whole pieces of lime with the peel adds a bitter complexity to this simple drink. To make a Caipiroska, substitute vodka for the cachaça.
Halve crosswise:
Reserve half of the lime for another use, cut the other half into quarters, and place the lime quarters in a chilled old-fashioned glass. Add:
Muddle the lime pieces with the sugar just enough to extract the juice (bruising the lime peel too much will make the drink overly bitter). Add:
Stir to dissolve the sugar. Fill the chilled glass with roughly crushed ice and stir to chill.
