PENICILLIN
1 serving

This pseudo-medicinal cocktail has the flavors of a hot toddy, but in a more concentrated form and with an extra helping of smokiness from the single-malt Scotch. This drink is usually made with a honey-ginger syrup, but we have simplified the process for more immediate gratification. Omit the ginger and swap the whisky for gin, and you’ve got the Prohibition-era classic, the Bee’s Knees.

Place in the bottom of a cocktail shaker:

  • 3 thin slices ginger
  • ¾ ounce lemon juice
  • 1 teaspoon honey

Muddle the ginger until bruised and fragrant and add ice cubes to the shaker, along with:

  • 2 ounces blended Scotch

Shake until well chilled, about 12 seconds. Strain into a chilled rocks glass filled with ice. Pour on top:

  • ¼ ounce single-malt Islay Scotch
