See About Egg Safety. Combine in a cocktail shaker:

  • 2 ounces London dry gin (1 ½ ounces if using vermouth)
  • 1 ounce lemon juice
  • (½ ounce dry vermouth)
  • ½ ounce Fruit Syrup, made with raspberries
  • 1 egg white

Shake without ice for 10 seconds. Fill the shaker with ice cubes and shake until well chilled, about 12 seconds. Strain into a chilled coupe or martini glass. Garnish, if desired, with:
