Irma’s signature gin cocktail, a Prohibition-era staple, has been in the book since 1931, where it appeared on the opening page. Called simply “gin cocktail,” it was a solid formula for polishing the rough edges off of illicit bathtub spirits. We think it’s even better with decent gin.

Fill a cocktail shaker with ice cubes. Add:

  • 2 ounces gin
  • 2 ounces grapefruit or orange juice
  • ¾ ounce lemon juice
  • (1 teaspoon Simple Syrup, Fruit Syrup, or Citrus Syrup)
  • A dash of orange bitters

Shake until well chilled, about 12 seconds. Strain into a chilled rocks glass.
