Prepare Simple Syrup. Remove the hot syrup from the heat and stir in one of the following: 1 ½ teaspoons whole cloves, 4 cinnamon sticks, 6 whole star anise, or one 3-inch piece ginger, thinly sliced. Cover and let stand 30 minutes. Strain and let cool. Chill until needed. Store refrigerated for up to 1 month.
