HERB SYRUP
About 2 cups

I. Proceed as for Simple Syrup. Once the sugar has dissolved, stir in 1 small bunch lavender, rosemary, or lemon verbena. Simmer, covered, for 5 minutes. Let cool. Strain and chill until needed. Store refrigerated for up to 1 month.

II. Prepare Simple Syrup. Remove the hot syrup from the heat and add 1 bunch mint or ¾ cup mint leaves. Cover and let stand 20 minutes. Strain and let cool. Chill until needed. Store refrigerated for up to 1 month.
